Comfort Foods: Hot Chocolate

Yields five 8-oz servings.

What you’ll need:

  • ½ cup sugar (Stevia can be a healthier alternative to this. It is natural and has no carbs or calories and does not raise blood sugar.)
  • ¼ cup Hershey’s unsweetened cocoa
  • Dash of salt
  • ⅓ cup of hot water
  • 4 cups (1 qt.) of milk (Almond milk could be a bit healthier and also adds a little bit of sweetness. It is enriched with nutrients like calcium, vitamin D, and the antioxidant vitamin E; however, it contains very little protein.)
  • ¾ teaspoon of vanilla extract
  • Mini marshmallows or whipped cream (optional.)

 

  1. Stir together the sugar, (or alternative sweetener) cocoa and salt in a medium saucepan, then stir in water. Cook over medium heat, stirring constantly until the mixture comes to a boil.
  2. Keep stirring and boiling for about 2 minutes.
  3. Add your milk, still stirring constantly. Reduce heat to serving temperature, do not boil.
  4. Remove from heat and add vanilla.
  5. Beat with a whisk until the mixture is foamy.
  6. Serve topped with marshmallows or whipped cream if desired.
