Homemade German Potato Pancakes

A traditional German recipe passed down by my great grandmother and a staple to my family’s annual Christmas dinner.

Makes a dozen pancakes

  • 5 lbs of white potatoes
  • 4 eggs
  • 2 tbsp Maggi seasoning
  • 1 onion
  • ½ cup white flour
  • 2 tsp salt
  • ½ tsp pepper

Step 1

Start by peeling 5 pounds of potatoes and placing them aside.

Step 2

Using either a food processor or a large-cut cheese grater, shred the potatoes into a large bowl.

Step 3

Finely slice the onion and measure the remaining ingredients and add them to the mixture.

Step 4

Using your hand, mix the ingredients into a consistent mixture being careful not to mash the potato shavings.
